04 Aug Potato Salad made with Yams & Fresh Lime Dressing
Ingredients
Salad
- 10 Yams peeled, diced or large cubed
- 10 cups Chicken Broth (enough to cover the potatoes)
- 1 cups Water Chestnuts diced medium
- 3 cups Red Pepper diced medium
- 8 Green Onion Sliced
Dressing
- 1 cups Sioux Z Wow Gourmet Marinade
- 1 cups Fresh Lime Juice
- 1+ t. Ground Cumin

Instructions
To Make Salad:
- Boil yams in chicken broth until tender.
- Place the cooked yams on a cookie sheet and chill.
- Place the chilled yams in a bowl and add the water chestnuts, red pepper and green onion.
To Make Dressing:
- In a separate bowl, whisk together dressing ingredients.
- Pour the dressing over the salad ingredients and toss to mix thoroughly.
To Serve:
- Chill and garnish with chopped green onion over the top.
For a Variation on a Theme:
- Toss the salad with Thai This Peanut Sauce but add several extra tablespoons of rice wine vinagar at the last minute.
