03 Aug Twice Baked Potatoes stuffed with Bacon, Cheese & Sour Cream
Ingredients
- 4 lg. Russet Potatoes
- 8 Bacon strips cut crosswise1/4" pieces
- 4 oz. Aged Cheese sharp cheddar or dry jack, shredded
- 1/2 C. Sour Cream
- 1/2 C. Buttermilk
- 2 T. Unsalted Butter melted
- 1 C. Sioux Z Wow Marinade
- 1/2 C. Green Onion sliced

Instructions
To Make & Cook:
- Preheat oven to 350 F.
- Pierce potatoes with fork and bake for about 60 minutes or until done. Set aside to cool.
- Fry bacon pieces until crisp, about 5-7 minutes.
- Remove bacon to a paper towel lined plate to drain. Set aside.
- Cut each cooled potato in half. With a small dinner spoon scoop out flesh,leaving 1/8 to 1/4 inch thickness of flesh in each shell.
- Arrange shells on baking sheet, flesh sides up. Brush with 1/2 of the Sioux Z Wow.
- Bake at 350 for 15 minutes.
- Meanwhile, with a fork or clean hands, mix potato flesh with scallions, sour cream, buttermilk, cheese and bacon.
- Remove shells from oven. Stuff each with mixture.
- Bake another 10-15 minutes or until just beginning to brown on top.
- Brush tops with remaining Sioux Z Wow and bake 5 minutes more.
To Serve:
- Place on a pretty plate and devour hot!!!
