03 Aug Pumpkin Soufflé with Orange Ginger Sauce
Ingredients
- 6 C. Pumpkin or Yams (1 lg. & 1 sm can) cooked and mashed
- ½ C. Milk or Cream
- 12 T. Butter room temp
- 4 lg. Eggs
- 2 T. Crystallized Ginger for garnish
Orange Ginger Sauce
- 1 C. Sioux Z Wow Marinade
- 1/4 C. Bourbon optional
- 1 C. Orange Juice
- 1/2 C. honey
- 1 T. Fresh Ginger peeled & minced
- 1 T. Crystallized Ginger chopped
- 1+ T. Orange Zest The + is for garnish

Instructions
To Make the Orange Ginger Sauce:
- In a saucepan, combine all ingredients except bourbon. Bring to a boil, stirring regularly.
- Reduce heat and simmer uncovered 40 min. Let cool and then stir in bourbon.
To Make Pumpkin Soufflé:
- Preheat oven to 350F.
- Place pumpkin in mixing bowl. Whisk in milk and butter.
- Whisk in eggs one at a time. Whisk as you slowly pour in 1 Cup of your Orange Ginger Sauce.
- Pour batter into a buttered baking dish.
To Cook:
- Bake at 350 for 30-40 min., (center is firm when done).
To Serve:
- Garnish top with crystallized ginger and strips of orange zest.
- For an aromatic treat, drizzle lightly with bourbon.
- Serve hot.
