Love Me Tenders with Amazing Glaze

To Marinate:
  1. Put turkey tenders in a zip top bag and add ½ C. Sioux Z Wow. Marinate 1+ hour.
To Cook:
  1. Preheat oven to 350F.
  2. Place tenders in a foil lined baking dish. Mix the glaze ingredients together and spoon ½ of mixture over the tenders.
  3. Cover with foil and bake 25 min. or until just beyond pink. (165 degrees).
To Serve:
  1. Remove from oven and let rest a couple minutes. Place tenders on a cutting board and slice into ¼” slices on the diagonal.
  2. Serve with the rest of the Amazing Glaze swirled over the top.

To Marinate:
  1. Mix 4 T. Sioux Z Wow, 4 T. wine, apricot preserves and onion soup mix in a bowl.
  2. Put the rack of lamb into a zip top bag and pour in the marinade over the lamb. Seal the bag and rub the marinade over the rack to cover all surfaces.
  3. Marinate in the refrigerator, turning several times, at least 24 hours.
To Roast:
  1. Preheat the oven to 400 F.
  2. Cover a shallow baking pan with foil and place the rack, fat side up, in the pan. Retain the Spicy Apricot Glaze marinade in the bag.
  3. Roast uncovered in the oven for 15 min. Pull the rack out and turn the oven to broil.
  4. Brush the rack again with the marinade and place under the broiler for 4 min. Remove and let rest for 5 min before carving.
To Serve:
  1. Pour the remaining Spicy Apricot Glaze marinade from the bag into a sauce pan along with the drippings from the lamb.
  2. Add ½ C. Sioux Z Wow, dried apricots and a splash more wine and bring to a simmer.
  3. Carve the rack, two ribs per slice, and serve Spicy Apricot Glaze drizzled over the top.

To Marinate:
  1. Put shrimp in a zip top bag with 1/2 cup Sioux Z Wow & marinate.
  2. Place pineapple spears in a separate bag & marinate in 1/4 cup S Z W.
To Assemble:
  1. Cut each spear of pineapple into 4 cubes.
  2. Fold & tuck a shrimp around a cube of pineapple, then wrap both in a strip of bacon. Secure with a toothpick or skewer.
To Cook:
  1. Place all rumaki on foil lined baking sheet. Bake at 400 for 5-7 min., turning once, making sure bacon is crisp.
To Serve:
  1. Serve hot with plenty of napkins & dipping sauce made of Apricot Preserves & remaining Sioux Z Wow, well blended
