Instructions
To Make:
  1. Combine all ingredients in a sauce pan. Bring to a boil, stirring.
  2. Reduce heat and simmer uncovered approximately 40 min.
  3. If using, now add the bourbon.
Serving Suggestions:
  1. An excellent glaze for a baked ham, or for a roasted duck or game hens.
  2. Whip into mashed yams.
  3. Orange Ginger Sauce is delightful as a dipping sauce for wontons.
  4. Toss with steamed carrots or serve as a side sauce with green beans.
  5. Brush lightly on asparagus or summer squash.

Instructions
To Marinate:
  1. Wash chicken and pat dry. Place in zip top bag with Sioux Z Wow and bourbon.
  2. Marinate 1-3 hours.
To Cook:
  1. Grill over med. to hot coals for 20-25 min. turning once.
To Serve:
  1. Serve with steamed rice and grilled veggies or good old potato salad.

To Make the Orange Ginger Sauce:
  1. In a saucepan, combine all ingredients except bourbon. Bring to a boil, stirring regularly.
  2. Reduce heat and simmer uncovered 40 min. Let cool and then stir in bourbon.
To Make Pumpkin Soufflé:
  1. Preheat oven to 350F.
  2. Place pumpkin in mixing bowl. Whisk in milk and butter.
  3. Whisk in eggs one at a time. Whisk as you slowly pour in 1 Cup of your Orange Ginger Sauce.
  4. Pour batter into a buttered baking dish.
To Cook:
  1. Bake at 350 for 30-40 min., (center is firm when done).
To Serve:
  1. Garnish top with crystallized ginger and strips of orange zest.
  2. For an aromatic treat, drizzle lightly with bourbon.
  3. Serve hot.

Instructions
To Marinate:
  1. Clean pork roast. Place in large zip lock bag. Pour Sioux Z Wow and bourbon over roast. Close bag, removing as much air as possible.
  2. Then rub marinade over entire roast. Let marinate in refrigerator overnight. Note: 3-4 days is optimal.
To Cook:
  1. Preheat oven to 325F.
  2. Remove roast from bag and place in a baking dish. Cover with a foil tent leaving 2” air space.
  3. Bake 20 min. per lb. basting periodically with Sioux Z Wow.
To Brown:
  1. Remove tent for last 20 min.
  2. Use a meat thermometer (160-165F) to insure doneness.
  3. Let stand 10 min. before carving.
To Serve:
  1. For Dinner Party, place on a platter and garnish for carving at the table.
  2. For Cocktail Party, dice and toothpick. Serve both with Sioux Z Wow Chutney.
