To Make:
  1. Heat the oven to 350 F.
  2. Wash the potatoes and pat dry with paper towel. Rub potatoes with butter on all sides and bake for 1 hour.
  3. Mix together the tomatoes, onion, tomato juice olive oil, Sioux Z Wow and oregano. Add salt and pepper to taste.
  4. Set aside while potatoes finish baking.
To Assemble:
  1. When the potatoes are done, cut them in half lengthwise and crush the 'meat' with a fork.
  2. Top with the tomato mixture generously. Sprinkle with parmesan cheese and place in the oven at 500 F for 3 min.
To Serve:
  1. While piping hot,serve with a green salad and your favorite cold beverage.

To Marinate:
  1. Place scallops in a zip-top bag with Sioux Z Wow, the diced peppers, 2/3 of the bacon and half of the green onions (reserving most of the green parts for garnish).
  2. Marinate 2-3 hr.
To Cook:
  1. Boil 5 qt. of water for the pasta. Heat olive oil in a deep sauté pan.
  2. Take the peppers and onions from the marinade (leaving the scallops and 1/2 of the juice behind), and sauté gently for 3-5 min.
  3. Cook pasta per package instructions.
  4. Drain and return to the pot, adding a few tablespoons each of wine and chicken broth to keep from sticking.
  5. Now add scallops and the rest of the marinade liquids to sauté pan.
  6. Add wine and chicken broth to bring to sauce consistency. Simmer 3-5 min.
To Serve:
  1. Divide pasta onto pretty plates and scoop scallops and sauce over pasta. Garnish with remaining bacon and green onions.
  2. Sprinkle with parmesan and light the candles.
  3. Serve with a salad of baby greens, a tall flute of your favorite bubbly, a bit of Mozart and time - lots of it - to savor the . . ."

To Prepare Portobellos:
  1. Place them in a zip top bag. Add 1 cup of Sioux Z Wow Marinade. Make sure all the mushrooms are coated.
  2. Set aside for 1+ hours. Add olive oil just before grilling.
To Make Sauce:
  1. Whisk together ½ cup Sioux Z Wow marinade with ½ cup of mayonnaise.
To Make Portobello Platters:
  1. Remove the mushrooms from the marinade bag and grill on a medium hot grill for 3-4 minutes per side.
  2. Then place the grilled mushrooms on a foil covered baking sheet, stem side up and generously spoon on the Sioux Z Wow Silk sauce.
  3. Now add the sliced tomatoes and the shredded cheese.
  4. Decorate the top with confetti peppers. Turn on the broiler and broil for 3-5 minutes.
To Serve:
  1. As appetizers, slice the Portobello Platters like pizza for great finger food.
  2. As a vegetable side, serve whole with beef, pork or chicken.
  3. As a vegetarian main course, plate 2-3 and garnish with chopped scallions and accompany with cornbread or polenta.

To Marinate:
  1. Cut the lamb into six equal portions.
  2. Place in a zip top bag with Sioux Z Wow and marinate from 1-3 days.
To Assemble:
  1. Paint a circle in the middle of each parchment with olive oil.
  2. Place a slice of onion in the center of each parchment. Top with lamb portion, allowing Sioux Z Wow to generously accompany the meat.
  3. Stack peppers, carrots and cheese on the meat and top with rosemary.
  4. Loosely gather the edges of the paper together, encapsulating every morsel.
  5. Sprinkle lemon juice and a ½ T. of wine into each ensemble.
  6. Now twist the top firmly together and tie securely with butcher’s string, finishing with a bow.
  7. Brush each parcel with oil and nestle them in a shallow baking pan.
To Cook:
  1. Bake the packets in a preheated 325F oven for 1-½ hours.
To Serve:
  1. Serve the parcels as an unopened gift. Watch and enjoy your guest’s delight.

To Marinate:
  1. Dice the chicken and place in a zip top bag. Add 4 oz of Sioux Z Wow. Close the bag and move the chicken around to cover all surfaces.
  2. Let marinate for 1-3 hours refrigerated.
To Prepare:
  1. Clean and arrange in serving bowls: lettuce, onions, cheese, tomatoes, basil and cilantro.
  2. Prepare the tortillas by warming in the oven or microwave while cooking the chicken.
To Cook:
  1. Put 2 T. olive oil in a skillet.
  2. Heat the skillet over medium heat.
  3. Using a slotted spoon, place the chicken in the skillet. Cook slowly, stirring often until chicken is done (about 4-5 minutes).
  4. Add the remaining 4 oz. of Sioux Z Wow and reduce for another few minutes.
To Serve:
  1. Place in a serving bowl and garnish with a sprig of cilantro.
  2. Put the warm tortillas in a tortilla basket to stay hot.
  3. Arrange the basket, bowl of chicken and other ingredients so your guests can build there own gourmet tacos.

To Marinate:
  1. Put chicken in a zip top bag with Sioux Z Wow for 1 hour or more.
  2. Add the peppers, onions and olive oil.
To Cook:
  1. Heat a skillet to fiery hot and pour in the marinated chicken and vegetables.
  2. Squeeze the lime halves over the fajita mix. Cook for 5-7 min., stirring occasionally.
  3. Heat the tortillas in a moist towel in the micro for 30 seconds.
To Serve
  1. Plate the tortillas.
  2. Sprinkle some of the cilantro over the fajitas and serve sizzling hot in the skillet for individual assembly.

To Marinate:
  1. Cut each shrimp with scissors down the back & devein.
  2. Spread shell but keep attached.
  3. Place in zip top bag. Marinate in 8 T. SZW for 2 hrs.
To Prep:
  1. In a sauté pan, heat oil & 2 T. of SZW. Sauté onion and red pepper 2-3 min.
  2. Add artichoke hearts & water chestnuts. Mix well & heat through.
  3. Add breadcrumbs & Parmesan cheese. Remove from heat.
  4. If dry, add 1T. artichoke marinade. Add parsley & bacon. Mix well.
To Assemble:
  1. Spread shrimp shell & place a spoon of stuffing into either side. Gently press shell together.
To Cook:
  1. Place on a baking sheet and cook under broiler for 5 min. (shells will turn pink).
To Serve:
  1. Serve as appetizers or as an entree on a bed of yellow rice with garlic green beans & a good Bordeaux.

To Marinate:
  1. Mix olive oil with Sioux Z Wow and brush both sides of each piece of eggplant.
  2. Place in a zip top bag with the remaining marinade and let stand for 1 hour.
To Cook:
  1. Turn the broiler on in the oven. Spray vegetable oil on a baking sheet and arrange the eggplant slices on it.
  2. Broil eggplant about 3-4 min., until golden, and then turn with a spatula and broil the other side until golden brown. Note: Even better on the grill, about 3” from med/high heat.
  3. Transfer eggplant to a large platter and let cool in a single layer.
  4. In a small bowl, mash together feta, ricotta and mint. Cut peppers into 1” wide lengthwise strips.
To Assemble Rolls:
  1. Spread each slice of eggplant, at the narrow end, with 1 T. full of the cheese mixture.
  2. Then gently press 4-6 arugula or spinach leaves into the cheese. Let the ends of the leaves stick out the sides. Now lay several strips of the red peppers across the slice of eggplant from side to side. Beginning at the narrow end of the eggplant (where the cheese is), roll up each slice to enclose the cheese, the leaves and peppers. (Rolls may be made 2 hrs ahead, covered and held at room temp.)
To Serve:
  1. Cut in half on the diagonal and arrange on a serving platter. Or, cut into 1” rolls and stand on end, like sushi rolls. Serve with Sioux Z Wow for dipping and our Sassy Black Bean Salsa.

  1. Slice each eggplant into 4 equal length wise sections leaving them attached at the stem.
  2. Combine with Sioux Z Wow and Olive Oil and marinate in a zip top bag 30 minutes.
To Cook:
  1. Prepare a medium hot grill.
  2. Remove the eggplants from the marinade and place on the grill so that the slices are spread out. Grill until done turning frequently.
To Serve:
  1. Serve hot off the grill. Or, arrange the eggplants on a platter and chill. Paint with a light coating of Sioux Z Wow.
  2. Garnish with sliced green onion.
