03 Aug Grilled Portobello Mushrooms with Peppers, Tomatoes and Mozzarella
Ingredients
- 12 sm. Portobello Mushrooms with stems removed
- 1 ½ C. Sioux Z Wow Marinade
- 2 T. Olive oil
- 1 C. Confetti Peppers red, orange, yellow & green small dice
- 4 Roma Tomatoes sliced medium
- 1 C. Mozzarella Cheese shredded
- ½ C. Mayonnaise
- 1 bn. Scallions Green tops, sliced

To Prepare Portobellos:
- Place them in a zip top bag. Add 1 cup of Sioux Z Wow Marinade. Make sure all the mushrooms are coated.
- Set aside for 1+ hours. Add olive oil just before grilling.
To Make Sauce:
- Whisk together ½ cup Sioux Z Wow marinade with ½ cup of mayonnaise.
To Make Portobello Platters:
- Remove the mushrooms from the marinade bag and grill on a medium hot grill for 3-4 minutes per side.
- Then place the grilled mushrooms on a foil covered baking sheet, stem side up and generously spoon on the Sioux Z Wow Silk sauce.
- Now add the sliced tomatoes and the shredded cheese.
- Decorate the top with confetti peppers. Turn on the broiler and broil for 3-5 minutes.
To Serve:
- As appetizers, slice the Portobello Platters like pizza for great finger food.
- As a vegetable side, serve whole with beef, pork or chicken.
- As a vegetarian main course, plate 2-3 and garnish with chopped scallions and accompany with cornbread or polenta.
