03 Aug Twice Baked Potatoes with Roma Tomato Salsa
Ingredients
- 1 T. Butter softened to room temp.
- 2 Baking Potatoes med.
- 6 Roma Tomatoes chopped
- 2 T. Tomato juice
- ½ Sweet onion med., diced
- 2 t. Olive oil
- 2 T. Sioux Z Wow Marinade
- 1 t. Oregano
- ½ C. Parmesan cheese
- Salt and Pepper to taste

Instructions
To Make:
- Heat the oven to 350 F.
- Wash the potatoes and pat dry with paper towel. Rub potatoes with butter on all sides and bake for 1 hour.
- Mix together the tomatoes, onion, tomato juice olive oil, Sioux Z Wow and oregano. Add salt and pepper to taste.
- Set aside while potatoes finish baking.
To Assemble:
- When the potatoes are done, cut them in half lengthwise and crush the 'meat' with a fork.
- Top with the tomato mixture generously. Sprinkle with parmesan cheese and place in the oven at 500 F for 3 min.
To Serve:
- While piping hot,serve with a green salad and your favorite cold beverage.
